Beetroot Ravioli with Flourish Foods Beetroot Atta
Delicate, vibrant, and nutrient-rich — this Beetroot Ravioli made with Flourish Foods Beetroot Atta brings together beautiful color and wholesome ingredients. Using a plant-based aquafaba dough and a creamy almond filling, this recipe is perfect for a refined, modern meal.
Ingredients
For the Dough
Flourish Foods Beetroot Atta – 250 gm
Aquafaba – 6 tbsp
Curd – 150 ml
Sea salt – 2 tsp
Water – as needed
Extra atta – for dusting
For Aquafaba (Egg Substitute)
Chickpeas – as required
Preparation:
- Soak chickpeas overnight
- Boil for 1–1.5 hours (ensure they are cooked but not mushy)
- Strain and reserve the cooking water
- Skim off any foam formed during cooking
- Use this liquid as aquafaba
For Filling (Almond Cream)
Almond flakes – 85 gm
Water – 120 ml
Sea salt – 1 tsp
Garlic – 1 clove
Lemon juice – 1 tbsp
Black pepper – to taste
Fresh parsley – chopped
Instructions
1. Prepare the Dough
· In a blender, combine aquafaba and curd and blend until smooth.
· In a bowl, add Flourish Foods Beetroot Atta and salt, and create a well in the center.
· Pour in the aquafaba-curd mixture and begin mixing.
· Knead the dough for about 10 minutes, adding water if required, until smooth and pliable.
· Cover and let it rest for 20 minutes.
2. Roll and Shape
· Divide the dough into 4 equal portions.
· Roll each portion into a thin sheet, dusting with atta as needed.
· Cut into desired shapes for ravioli sheets.
3. Prepare the Filling
In a blender, combine:
- Almond flakes
- Water
- Sea salt
- Garlic
- Lemon juice
- Black pepper
Blend until smooth and creamy.
Fold in chopped parsley.
4. Assemble the Ravioli
· Place small portions of filling on one sheet of dough.
· Cover with another sheet and press gently to seal.
· Cut into ravioli shapes and seal the edges properly.
5. Cook & Serve
· Boil the ravioli in salted water until they float.
· Serve warm with your choice of sauce or simply drizzle with olive oil and herbs.
