Khapli Wheat Pita Bread with Flourish Foods Khapli Atta


Soft, wholesome, and perfectly pocketed, this homemade Pita Bread made with Flourish Foods Khapli Atta is a nutritious alternative to regular pita. It bakes into fluffy rounds that puff beautifully, making them ideal for stuffing with veggies, spreads, or wraps.

Ingredients

·       Flourish Foods Khapli Atta – 240 gm

·       Yeast – 2 tsp

·       Salt – 1 tsp

·       Sugar – 1 tsp

·       Warm Water – 180 ml

·       Ghee – 1 tsp

Method

1. Activate the Yeast

·       In a mixing bowl, add Flourish Foods Khapli Atta and make a well in the center.

·       Sprinkle salt, sugar, warm water, and yeast into the well.

·       Let it sit for 5 minutes or until the yeast becomes frothy.

2. Prepare the Dough

·       Mix the ingredients gradually, adding the remaining water if needed.

·       Knead the dough for about 10 minutes until smooth.

3. Add Ghee and Knead

·       Add ghee to the dough and knead again for 2 minutes until soft and pliable.

4. First Rest

·       Cover the dough and allow it to rest for 40 minutes until it slightly rises.

5. Knock Back and Divide

·       Punch down the dough gently to release the air.

·       Divide the dough into equal portions.

6. Roll and Second Proofing

·       Roll each portion into a small ball and let them rest for 10 minutes.

7. Shape the Pita

·       Roll each dough ball into a thick round disc (similar to a roti).

8. Final Proofing

·       Place the shaped dough in a preheated but turned-off oven for 15 minutes to proof.

9. Bake the Pita Bread

·       Bake at 160°C for about 15 minutes, or until the pita breads puff up and cook through.

10. Cool and Serve

·       Remove from the oven and allow them to cool slightly.

·       Slice gently to reveal the pocket and fill with your favorite spreads, vegetables, or fillings.

Chickpea Topping

Ingredients:

  • 1 tsp oil
  • 1 tsp cumin seeds
  • 7–8 garlic cloves (chopped)
  • 8–10 cherry tomatoes
  • 200 g boiled or canned chickpeas
  • Salt to taste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • A pinch of turmeric powder
  • ¼ tsp chili powder
  • A handful of parsley (chopped)

Steps:

  1. Heat oil in a pan.
  2. Add cumin seeds and let them splutter.
  3. Add chopped garlic and sauté until fragrant.
  4. Add cherry tomatoes and cook until soft.
  5. Add chickpeas and mash lightly.
  6. Add salt, cumin powder, coriander powder, turmeric, and chili powder.
  7. Mix well and sauté for a few more minutes.
  8. Add chopped parsley and stir.
  9. Let it cool, then store in an airtight container if needed.

Garlic Yogurt Dip

Ingredients:

  • 30 g chopped garlic
  • 200 g hung curd (thick yogurt)
  • 10 g chopped parsley
  • Zest of 1 lemon

Steps:

  1. In a bowl, combine hung curd and chopped garlic.
  2. Add parsley and lemon zest.
  3. Mix well until smooth and creamy.

Tadka (Tempering)

Ingredients:

  • 1 tsp oil
  • ½ tsp cumin seeds
  • ¼ tsp chopped garlic
  • ¼ tsp paprika or chili powder
  • 3–4 sprigs parsley

Steps:

  1. Heat oil in a small pan.
  2. Add cumin seeds and let them crackle.
  3. Add garlic and sauté briefly.
  4. Add paprika/chili powder and switch off heat.
  5. Pour this hot tadka over the garlic yogurt dip.
  6. Garnish with parsley.

Assembly

  1. Take a pita bread.
  2. Spread a generous layer of garlic yogurt dip.
  3. Add the chickpea topping on top.
  4. Serve immediately.

 Now indulge with your loved ones. Serve hot!
